Lateral entrants immediately win the tough Koch trainee contest of the selection of German luxury hotels - if that's not a positive signal!
(Baden-Baden, April 30, 2019) That's awesome: Michael Kwoczek, until recently a buyer in the fashion industry and now a prospective chef at the Hotel Breidenbach Hof, won the really tough cook trainee contest in his first year Selection of German luxury hotels. With this, a cross-changer trumps the hotel elite. That has never been there! He had to compete with strong young chefs from the best luxury hotels in Germany and conjure up a three-course finder food menu from a specified shopping cart. Second place went to Jesse König from Ritz-Carlton Berlin and third place went to Norbert Jacniak from the host Brenners Park-Hotel & Spa.
All participants were asked in advance to design a 3-course finger food menu from a specified shopping cart. The special challenge: In addition to a selection of seasonal products, there were three ingredients that had to be included in the menu in any case: trout in the starter, pork belly in the main course and cucumber in the dessert. An expert jury of food and travel journalists then had the difficult task of determining the best menu from the creative dishes cooked with a lot of passion using the previously defined evaluation criteria.
The chefs' trainee contest was launched in 2015 by the chefs of the selection under the patronage of Haerlin chef Christoph Rüffer in order to inspire top-class young talent in the kitchens of the member houses and to promote a possible upcoming career.
