This is how the training in the hotel and restaurant industry is being modernized - finally, after more than 15 years!
Berlin, March 13, 2019 - This is more than overdue: Finally, the training content in the hotel and restaurant industry should finally be renewed - after more than 15 years. A corresponding application was made to the Federal Ministry of Economics. And these are the most important cornerstones of the new training:
1. Hotel clerk now means: Clerk for hotel management; The competencies in the areas of booking systems, evaluation portals, revenue management and sales are to be greatly expanded - as an alternative to university studies.
2. Restaurant subject: Competencies regarding products, sales and event management are given greater weight
3. Specialist for system catering: new training content on digitization and interculturality
4. Cooks: Calculation and cost control play an even greater role, as do modern kitchen technology, new consumer protection requirements and changing culinary preferences of guests; Minimum content, particularly in the areas of work techniques and cooking processes, is formulated and specified in more detail
5. All training occupations are supplemented with teaching content on "digitization and communication" as well as "instruction and management of employees"
6. Previous training occupation "specialist in the hospitality industry" is split into two training occupations: the "specialist for hotels and restaurants" with the two focal points restaurant service and system catering covers the service area, the new "kitchen specialist" covers the kitchen area.
7. New is the so-called "extended final exam". This means that the first part of the exam takes place about halfway through the training period, like the previous intermediate exam, the second at the end. What is new is that both results flow into the final grade.
A reorganization of the training content has been debated for over four years; Most recently, blockade by the NGG union, which tends to be denigrated across the board, prevented this. However, patience is still required: the entire process takes a long time. at the earliest, the new ordinances are not expected to enter into force until August 2021.
